Description

A creamy, simple chicken casserole made with cottage cheese, rice or pasta, and peas, perfect for a warm, filling meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 cup cooked rice or pasta
  • 1 can cream of chicken soup
  • 1/2 cup frozen peas
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together cooked chicken, cottage cheese, sour cream, cheese, cooked rice or pasta, cream of chicken soup, frozen peas, garlic powder, onion powder, salt, and pepper until well combined.
  3. Transfer the mixture to a greased casserole dish and spread it out evenly.
  4. If desired, sprinkle breadcrumbs on top for added crunch.
  5. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and heated through.
  6. Let cool for a few minutes before serving.

Notes

Use cooked rotisserie chicken to save time. Swap rice for small pasta shapes if desired. You can add a spoon of extra shredded cheese on top when serving.
