Ingredients

  • 4 cups chicken broth
  • 2 tablespoons miso paste
  • 200 grams ramen noodles
  • 200 grams shrimp, peeled and deveined
  • 1 cup spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Green onions for garnish
  • Boiled eggs for serving (optional)

Instructions

  1. In a large pot, bring the chicken broth to a simmer.
  2. Stir in the miso paste until dissolved.
  3. Add the ramen noodles and cook according to package instructions.
  4. In the last couple of minutes of cooking, add the shrimp and spinach.
  5. Once the shrimp is pink and cooked through, stir in the soy sauce and sesame oil.
  6. Serve hot, garnished with green onions and boiled eggs if desired.

Notes

Use fresh or thawed shrimp for best texture. Taste the broth at the end and adjust soy sauce for more salt.
