- 1 lb Italian sausage (mild or spicy)
- 1 medium yellow onion (diced)
- 4 cloves garlic (minced)
- 2 medium carrots (diced)
- 2 stalks celery (chopped)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until translucent, about 3-4 minutes.
- Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in diced carrots and chopped celery.
- Pour in the chicken broth and bring to a gentle simmer.
- Reduce heat slightly and mix in heavy cream until well combined.
- Add fresh spinach and stir until wilted.
- Serve hot, topped with grated Parmesan cheese.
Notes
Serve it with extra Parmesan on top and crusty bread or a simple salad on the side. A pinch of black pepper or red pepper flakes also works well.
