Creamy Italian Sausage Soup

A delicious and comforting soup made with Italian sausage, veggies, and a creamy broth, perfect for cold days.

  • 1 lb Italian sausage (mild or spicy)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the diced carrots and chopped celery. Pour in the chicken broth and bring to a gentle simmer.
  4. Reduce heat slightly and mix in the heavy cream until well combined.
  5. Add fresh spinach and stir until wilted. Serve hot, topped with grated Parmesan cheese.

Notes

Serve hot with extra grated Parmesan cheese on top and crusty bread for a complete meal. Allow to cool completely before storing in an airtight container; it lasts 3-4 days in the fridge or 2-3 months in the freezer.
