Ingredients

- 1 small head of green cabbage, shredded
- 1 cup corn kernels (fresh or canned)
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup cilantro, chopped
- 1 avocado, diced
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Chop the cabbage fine so it mixes well.
- In a large bowl, combine the shredded cabbage, corn, bell pepper, red onion, cilantro, and avocado.
- In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
- Pour the dressing over the vegetable mixture and toss until everything is coated.
- Chill the salad for at least 30 minutes so the flavors blend.
- Serve chilled with chicken, tacos, or burgers.
