- 3 large parsnips, peeled and chopped
- 2 tablespoons butter
- 1/2 cup heavy cream

Instructions
- In a large pot, bring salted water to a boil.
- Add the chopped parsnips and cook until tender, about 15-20 minutes.
- Drain the parsnips.
- In the same pot, melt the butter over medium heat.
- Add the drained parsnips back to the pot, along with the heavy cream, salt, and pepper.
- Use an immersion blender or a regular blender to puree the parsnips until smooth and creamy.
- Serve warm as a side dish.
