- 4 chicken breasts
- 1 cup spinach, chopped
- 1 cup artichoke hearts, drained and chopped
- 1 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the spinach, artichokes, cream cheese, Parmesan cheese, garlic powder, salt, and pepper until well combined.
- Carefully slice a pocket into each chicken breast.
- Stuff each chicken breast with the spinach and artichoke mixture.
- Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.

Notes
Make sure not to overstuff the chicken breasts. You can use fresh or frozen spinach; just thaw and drain the frozen spinach well. For extra cheesiness, add more cheese to the stuffing.
