Creamy Sun-Dried Tomato Shrimp with Spinach Pasta

A delightful dish combining shrimp, a creamy sauce, and sun-dried tomatoes, perfect for any occasion.

  • 8 oz pasta of choice
  • 1 lb shrimp, peeled and deveined
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add shrimp and cook until pink and opaque.
  5. Stir in sun-dried tomatoes and spinach, cooking until spinach wilts.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in Parmesan cheese until melted and combined.
  8. Add cooked pasta to the skillet and toss to coat.
  9. Season with salt and pepper to taste.
  10. Serve warm and enjoy!

Notes

Make sure to remove the tails from the shrimp before cooking. Adjust the consistency of the sauce with more or less heavy cream.
