Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese
- 1/2 cup salsa
- 1 teaspoon taco seasoning
- 4 low-carb tortillas
- 1/4 cup sour cream (for serving)
- Chopped cilantro (for garnish)
Instructions
- In a bowl, combine cooked chicken, cheese, salsa, and taco seasoning.
- Lay out the low-carb tortillas and evenly distribute the chicken mixture on each tortilla.
- Roll each tortilla tightly to form the roll ups.
- In a skillet over medium heat, add a bit of oil and cook the roll ups until golden and crispy on all sides.
- Remove from the skillet and let cool slightly.
- Slice into bite-sized pieces and serve with sour cream and chopped cilantro.
Notes
For meal prep, store filling and tortillas separately. Use low-carb tortillas that are soft but not too thick.
