Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 teaspoon taco seasoning
  • 4 low-carb tortillas
  • 1/4 cup sour cream (for serving)
  • Chopped cilantro (for garnish)

Instructions

  1. In a bowl, combine cooked chicken, cheese, salsa, and taco seasoning.
  2. Lay out the low-carb tortillas and evenly distribute the chicken mixture on each tortilla.
  3. Roll each tortilla tightly to form the roll ups.
  4. In a skillet over medium heat, add a bit of oil and cook the roll ups until golden and crispy on all sides.
  5. Remove from the skillet and let cool slightly.
  6. Slice into bite-sized pieces and serve with sour cream and chopped cilantro.

Notes

For meal prep, store filling and tortillas separately. Use low-carb tortillas that are soft but not too thick.
