- 1 medium head of cauliflower
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Toppings of choice (pepperoni, vegetables, etc.)
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the cauliflower into small pieces and steam until tender.
- Allow the cauliflower to cool, then drain any excess moisture.
- In a bowl, mix the cauliflower with mozzarella cheese, Parmesan cheese, eggs, Italian seasoning, garlic powder, salt, and pepper.
- Form the mixture into bite-sized pizza crusts and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown.
- Remove from the oven, add your desired toppings, and return to the oven for an additional 5-10 minutes.

Notes
Squeeze out as much water from the cauliflower as possible to keep the bites crispy. Reheat in an oven or air fryer for the best crispness.
