- 2 lbs chicken pieces (thighs, drumsticks)
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 large eggs
- Cooking spray or olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Combine almond flour, Parmesan cheese, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper in a bowl.
- Beat the eggs in another bowl.
- Dip each chicken piece into the eggs, then coat with the almond flour mixture.
- Place chicken on a baking sheet lined with parchment paper.
- Spray lightly with cooking spray or drizzle with olive oil.
- Bake for 35-45 minutes, or until the chicken is golden brown and cooked through, flipping halfway.

Notes
Let the chicken cool before storing. It can be kept in the fridge for up to 4 days. Reheat at 350°F (175°C) for 10-15 minutes.
