Ingredients

  • 2 lbs chicken pieces (thighs, drumsticks)
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 large eggs
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine almond flour, Parmesan cheese, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper in a bowl.
  3. Beat the eggs in another bowl.
  4. Dip each chicken piece into the eggs, then coat with the almond flour mixture.
  5. Place chicken on a baking sheet lined with parchment paper.
