Quick and tasty salmon patties made with canned salmon and simple pantry items, perfect for lunch or as an appetizer.

Ingredients

Scale
  • 1 can of salmon (drained)
  • 1/2 cup almond flour or crushed pork rinds
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix together the drained canned salmon, almond flour (or pork rinds), Parmesan cheese, chopped onion, eggs, lemon juice, garlic powder, salt, and pepper until well combined.
  2. Form the mixture into patties.
  3. Heat oil in a skillet over medium heat.
  4. Fry the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Serve hot as a lunch or appetizer.

Notes

Drain the salmon well and press the patties firmly to prevent them from falling apart. For variation, add chopped herbs or hot sauce for extra flavor.
