Description

A rich, creamy, low-carb chocolate cheesecake made with almond flour and sugar-free chips.


Ingredients

  • 2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or sweetener of choice)
  • 1/2 cup butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sour cream
  • 1 cup erythritol (or sweetener of choice)
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup sugar-free chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine almond flour, cocoa powder, erythritol, and melted butter to form the crust. Press this mixture into the bottom of a springform pan.
  3. In a separate bowl, beat the cream cheese, sour cream, erythritol, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the sugar-free chocolate chips.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let cool before refrigerating for at least 240 minutes.
