Delectable Top Scalloped Sweet Potatoes Brown Sugar

  • 4 medium sweet potatoes (about 2 lbs), peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup dark brown sugar
  • 3 tbsp unsalted butter, cut into small pieces
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • Fresh herbs (optional, such as thyme or rosemary)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice sweet potatoes into thin rounds (about 1/8 inch thick).
  3. In a mixing bowl, whisk together heavy cream, brown sugar, cinnamon, salt, and pepper until well combined.
  4. Grease a baking dish and layer sweet potato slices, pouring some of the creamy mixture over each layer. Repeat until all ingredients are used.
  5. Dot the top layer with pieces of butter.
  6. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden brown.
