Ingredients

Scale
  • 1 lb Italian sausage (sweet or spicy)
  • 4 cups chopped kale (stems removed)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 6 cups low-sodium chicken broth
  • 2 medium potatoes (diced)
  • Salt to taste
  • Pepper to taste
  • Italian seasoning to taste

Instructions

  1. In a large pot over medium heat, brown the sausage for about 5-7 minutes. Drain excess fat if necessary.
  2. Add diced onions and sauté for 3-4 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Add diced potatoes and chicken broth; bring to a boil.
  5. Reduce heat to simmer for 15-20 minutes until potatoes are tender.
  6. Stir in kale and cover, cooking for an additional 5 minutes until wilted.
  7. Adjust seasoning before serving.

Notes

You can add grated Parmesan cheese on top for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
