Ingredients

- 1 lb Italian sausage (sweet or spicy)
- 4 cups chopped kale (stems removed)
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 6 cups low-sodium chicken broth
- 2 medium potatoes (diced)
- Salt to taste
- Pepper to taste
- Italian seasoning to taste
Instructions
- In a large pot over medium heat, brown the sausage for about 5-7 minutes. Drain excess fat if necessary.
- Add diced onions and sauté for 3-4 minutes until softened.
- Stir in minced garlic and cook for another 30 seconds.
- Add diced potatoes and chicken broth; bring to a boil.
- Reduce heat to simmer for 15-20 minutes until potatoes are tender.
- Stir in kale and cover, cooking for an additional 5 minutes until wilted.
- Adjust seasoning before serving.
Notes
For a vegetarian version, use plant-based sausage or skip sausage and add more beans or mushrooms. Thaw in the fridge before reheating if frozen.
