- 3 tablespoons mayonnaise
- 1 teaspoon mustard
- 1–2 jalapenos, finely chopped
- Salt and pepper to taste

Instructions
- Slice the hard-boiled eggs in half and remove the yolks.
- In a bowl, mash the yolks and mix with mayonnaise, mustard, chopped jalapenos, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika for garnish.
- Serve chilled on a plate or tray, paired with fresh veggies, crackers, or a simple salad.
Notes
Use firm, fully cooked yolks for a smooth filling. Finely chop jalapenos for even mixing. Taste and adjust seasoning to preference.
