- 6 hard-boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Jalapenos (fresh or pickled, diced, to taste)
- Paprika for garnish
Instructions
- Slice the hard-boiled eggs in half and carefully remove the yolks.
- In a bowl, mash the yolks and mix with mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
- Fold in diced jalapenos to your desired spice level.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika for garnish before serving. Serve them cold or at room temperature.
