- 4 hard-boiled eggs
- 1 lb sausage meat
- 1/2 cup almond flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 egg (beaten for egg wash)
- Olive oil spray
Instructions
- Preheat the air fryer to 270°C (525°F).
- Peel the hard-boiled eggs and set aside.
- In a bowl, mix the sausage meat with almond flour, garlic powder, onion powder, paprika, salt, and pepper.
- Divide the sausage mixture into four portions.
- Flatten each portion in your hand and wrap it around a hard-boiled egg, ensuring it is fully covered.
- Dip each scotch egg into the beaten egg, then place in the air fryer basket.
- Spray lightly with olive oil.
- Cook in the air fryer for 12-15 minutes, or until golden brown and cooked through.
- Let cool for a few minutes before serving.
Notes
Serve sliced in half or whole. Options for dipping include mustard or ketchup. Store in an airtight container for up to 3 days, reheat in the air fryer for crispness.
