Ingredients

  • 4 hard-boiled eggs
  • 1 lb sausage meat
  • 1/2 cup almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 egg (beaten for egg wash)
  • Olive oil spray

Instructions

  1. Preheat the air fryer to 270°C (525°F).
  2. Peel the hard-boiled eggs and set aside.
  3. In a bowl, mix the sausage meat with almond flour, garlic powder, onion powder, paprika, salt, and pepper.
  4. Divide the sausage mixture into four portions.
  5. Flatten each portion in your hand and wrap it around a hard-boiled egg, ensuring it is fully covered.
  6. Dip each scotch egg into the beaten egg, then place in the air fryer basket.
  7. Spray lightly with olive oil.
  8. Cook in the air fryer for 12-15 minutes, or until golden brown and cooked through.
  9. Let cool for a few minutes before serving.

Notes

Serve sliced in half or whole. Options for dipping include mustard or ketchup. Store in an airtight container for up to 3 days, reheat in the air fryer for crispness.
