Description
Quick and chewy cookies with the warm spice of carrot cake, made with oats and fresh carrots.

- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 cup grated carrots (about 2 medium carrots)
- 3/4 cup brown sugar
- 1 tsp ground cinnamon
- 2 large eggs
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together rolled oats, flour, cinnamon, baking powder, and salt until well combined.
- Finely grate the fresh carrots.
- In another bowl, cream brown sugar and eggs until light and fluffy.
- Fold in the grated carrots along with raisins or walnuts if using.
- Combine wet and dry ingredients without overmixing.
- Drop spoonfuls of dough onto the prepared baking sheet, spaced about two inches apart.
- Bake for 12-15 minutes until golden brown around the edges. Allow to cool slightly before enjoying.
Notes
Keep cookies in an airtight container for 2-3 days at room temperature or freeze for up to 2 months.
