Description

Quick and chewy cookies with the warm spice of carrot cake, made with oats and fresh carrots.


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup grated carrots (about 2 medium carrots)
  • 3/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together rolled oats, flour, cinnamon, baking powder, and salt until well combined.
  3. Finely grate the fresh carrots.
  4. In another bowl, cream brown sugar and eggs until light and fluffy.
  5. Fold in the grated carrots along with raisins or walnuts if using.
  6. Combine wet and dry ingredients without overmixing.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spaced about two inches apart.
  8. Bake for 12-15 minutes until golden brown around the edges. Allow to cool slightly before enjoying.

Keep cookies in an airtight container for 2-3 days at room temperature or freeze for up to 2 months.
