Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapenos (fresh or pickled)
- 1 cup buttermilk
- 1/4 cup melted butter
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a loaf pan.
- In a large bowl, mix together the flour, baking powder, and salt.
- Fold in the shredded cheddar cheese and diced jalapenos.
- In a separate bowl, whisk together the buttermilk and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool for a few minutes before slicing. Enjoy warm!
Notes
Don’t overmix the batter. Drain pickled jalapenos well. Use sharp cheddar for stronger flavor. If using fresh jalapenos, remove seeds for less heat.
