Description

A warm, cheesy loaf with a nice kick — quick to make and great for sharing.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapenos (fresh or pickled)
  • 1 cup buttermilk
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a loaf pan.
  3. In a large bowl, mix together the flour, baking powder, and salt.
  4. Fold in the shredded cheddar cheese and diced jalapenos.
  5. In a separate bowl, whisk together the buttermilk and melted butter.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool for a few minutes before slicing. Enjoy warm!

Notes

Don’t overmix the batter. Drain pickled jalapenos well. Use sharp cheddar for stronger flavor. If using fresh jalapenos, remove seeds for less heat.
