Ingredients

  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Palmini pasta (or preferred low-carb pasta)
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden and cooked through, about 6-8 minutes.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream, lemon zest, and lemon juice. Stir to combine, then reduce heat to low.
  4. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy.
  5. Add the cooked chicken and palmini pasta to the sauce, stirring to combine and heat through.
  6. Serve hot, garnished with chopped parsley.

Notes

For a different flavor, try adding Cajun spices or swap in shrimp for the chicken.
