- 2 cups cooked chicken, shredded
- 8 ounces egg noodles
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add egg noodles and cook according to package instructions until tender.
- Stir in the cooked chicken and season with salt and pepper.
- Simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley if desired.
Notes
Use cooked chicken from a roast or leftovers. For a richer flavor, brown the chicken pieces before adding the broth. Store noodles separately if keeping the soup for more than a day.
