Ingredients

  • 8 ounces egg noodles
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add egg noodles and cook according to package instructions until tender.
  5. Stir in the cooked chicken and season with salt and pepper.
  6. Simmer for an additional 5 minutes.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

Use cooked chicken from a roast or leftovers. For a richer flavor, brown the chicken pieces before adding the broth. Store noodles separately if keeping the soup for more than a day.
