Ingredients

  • 1 pound chicken breast
  • 6 cups chicken broth
  • 1 onion, halved
  • 3 cloves garlic, minced
  • 1 piece ginger, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • Rice noodles
  • Fresh herbs (basil, cilantro, etc.)
  • Bean sprouts
  • Lime wedges
  • Chili slices

Instructions

  1. In a large pot, bring the chicken broth to a simmer. Add the onion, garlic, and ginger, and cook for about 10 minutes.
  2. Add the chicken breast to the pot and simmer until cooked through, about 15 minutes.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in the fish sauce and soy sauce.
  5. Cook the rice noodles according to package instructions and divide them into bowls.
  6. Ladle the hot broth with chicken over the noodles.
  7. Top with fresh herbs, bean sprouts, lime wedges, and chili slices as desired. Enjoy your homemade chicken pho!
