Ingredients

  • 1 cup cooked chicken, shredded
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Use a spiralizer to turn the zucchini into zoodles.
  2. In a large pan, heat sesame oil over medium heat.
  3. Add garlic and ginger, sautéing until fragrant.
  4. Add the cooked chicken and mixed vegetables to the pan, stirring until heated through.
  5. Add the zoodles and soy sauce to the pan, cooking for an additional 2-3 minutes until zoodles are slightly softened.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions.

Notes

Do not overcook the zoodles; 2-3 minutes is enough. Use drained or patted dry zoodles to reduce extra water. Leftover roast chicken or rotisserie works well.
