- 1 cup cooked chicken, shredded
- 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Use a spiralizer to turn the zucchini into zoodles.
- In a large pan, heat sesame oil over medium heat.
- Add garlic and ginger, sautéing until fragrant.
- Add the cooked chicken and mixed vegetables to the pan, stirring until heated through.
- Add the zoodles and soy sauce to the pan, cooking for an additional 2-3 minutes until zoodles are slightly softened.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
Do not overcook the zoodles; 2-3 minutes is enough. Use drained or patted dry zoodles to reduce extra water. Leftover roast chicken or rotisserie works well.
