- 200g shrimp
- 2 cups chicken broth
- 2 tablespoons miso paste
- 1 cup ramen noodles
- 1/2 cup coconut milk
- 1 tablespoon soy sauce
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a pot, bring the chicken broth to a simmer.
- Add the miso paste, coconut milk, garlic, and ginger; stir until well combined.
- Add the ramen noodles and cook according to package instructions.
- While the noodles cook, in a separate pan, sauté shrimp until pink and cooked through.
- Once the noodles are cooked, add the shrimp into the broth mixture.
- Stir in the soy sauce and season with salt and pepper.
- Serve hot, garnished with chopped green onions.
