Ingredients

  • 200g shrimp
  • 2 cups chicken broth
  • 2 tablespoons miso paste
  • 1 cup ramen noodles
  • 1/2 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken broth to a simmer.
  2. Add the miso paste, coconut milk, garlic, and ginger; stir until well combined.
  3. Add the ramen noodles and cook according to package instructions.
  4. While the noodles cook, in a separate pan, sauté shrimp until pink and cooked through.
  5. Once the noodles are cooked, add the shrimp into the broth mixture.
  6. Stir in the soy sauce and season with salt and pepper.
  7. Serve hot, garnished with chopped green onions.
