Ingredients

  • 1 lb salmon fillet, diced
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 tsp dill
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrots, and sauté until softened.
  2. Add the vegetable broth and bring to a simmer.
  3. Stir in the diced salmon and cook until just cooked through.
  4. Lower the heat and add the heavy cream, dill, salt, and pepper. Stir gently and let it simmer for a few more minutes.
  5. Adjust seasoning as needed, then serve hot.

Notes
