- 1 lb salmon fillet, diced
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup celery, diced
- 1 cup carrots, diced
- 1 tsp dill
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrots, and sauté until softened.
- Add the vegetable broth and bring to a simmer.
- Stir in the diced salmon and cook until just cooked through.
- Lower the heat and add the heavy cream, dill, salt, and pepper. Stir gently and let it simmer for a few more minutes.
- Adjust seasoning as needed, then serve hot.
Notes
Serve with crusty bread or a small green salad. A squeeze of lemon on top brightens the taste. Store in the fridge for up to 3 days.
