Quick and delicious crispy Reuben roll ups perfect for a fast snack or easy lunch!
Ingredients

- 8 ounces corned beef, thinly sliced
- 8 ounces sauerkraut, drained
- 8 ounces Swiss cheese, shredded
- 1/2 cup Russian or Thousand Island dressing
- 4 large flour tortillas
- Butter or oil for frying
Instructions
- Lay a tortilla flat and spread a layer of dressing over it.
- On one side of the tortilla, layer corned beef, sauerkraut, and Swiss cheese.
- Roll the tortilla tightly, starting from the side with the filling.
- Heat a skillet over medium heat and add butter or oil.
- Place the roll ups seam side down into the skillet and cook until golden brown and crispy, about 3-4 minutes per side.
- Slice into bite-sized pieces and serve with additional dressing for dipping.
Notes
Drain the sauerkraut well to prevent sogginess. For a golden crust, use a mix of butter and oil.
