Tender steak fajitas cooked in a slow cooker with peppers and onions, perfect for busy nights.


Ingredients

  • 1 lb steak (such as flank or sirloin)
  • 2 bell peppers (sliced)
  • 1 onion (sliced)
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Slice the steak into strips.
  2. In a crockpot, layer the sliced steak, bell peppers, and onion.
  3. Sprinkle taco seasoning over the top and pour in beef broth.
  4. Season with salt and pepper.
  5. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until the steak is tender.
  6. Serve in low-carb tortillas or on lettuce wraps.

Notes

Warm low-carb tortillas or use large lettuce leaves when serving. Add sour cream, salsa, or guacamole if desired.
