Description
A simple and homey tamale pie featuring ground beef and a low-carb almond flour crust topped with cheddar cheese.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 1 can diced tomatoes
- 1 can corn (or substitute with cauliflower for low carb)
- 2 cups shredded cheddar cheese
- 2 cups almond flour (for crust)
- 2 large eggs
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground beef with chopped onion over medium heat. Drain excess fat.
- Stir in diced tomatoes, corn, chili powder, cumin, salt, and pepper. Simmer for 5-10 minutes.
- In a bowl, mix almond flour, eggs, and a pinch of salt to create the crust mixture.
- In a greased pie dish, spread half of the crust mixture on the bottom.
- Pour the beef mixture on top and then add the remaining crust mixture over the beef.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25-30 minutes or until golden brown.
- Let cool slightly before serving.
Notes
For a crisp top, broil for 1-2 minutes at the end. Serve warm with sour cream and avocado.
