Description

A simple and homey tamale pie featuring ground beef and a low-carb almond flour crust topped with cheddar cheese.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can diced tomatoes
  • 1 can corn (or substitute with cauliflower for low carb)
  • 2 cups shredded cheddar cheese
  • 2 cups almond flour (for crust)
  • 2 large eggs
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef with chopped onion over medium heat. Drain excess fat.
  3. Stir in diced tomatoes, corn, chili powder, cumin, salt, and pepper. Simmer for 5-10 minutes.
  4. In a bowl, mix almond flour, eggs, and a pinch of salt to create the crust mixture.
  5. In a greased pie dish, spread half of the crust mixture on the bottom.
  6. Pour the beef mixture on top and then add the remaining crust mixture over the beef.
  7. Sprinkle shredded cheddar cheese on top.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

For a crisp top, broil for 1-2 minutes at the end. Serve warm with sour cream and avocado.
