A soft and moist banana bread made with almond flour and ricotta, perfect for a low-carb diet.

- 3 ripe bananas
- 1 cup ricotta cheese
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup almond flour
- 1/4 cup sweetener (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a bowl.
- Add ricotta cheese, eggs, and vanilla extract to the mashed bananas and mix well.
- Combine the dry ingredients: baking powder, baking soda, salt, cinnamon, and almond flour in another bowl.
- Gradually add the dry mixture to the wet mixture, stirring until combined.
- Pour the batter into the prepared loaf pan.
- Bake for about 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing and serving.
Notes
Use very ripe bananas for better flavor. Do not overmix the batter after adding dry ingredients.
