Description

A soft and moist banana bread made with almond flour and ricotta, perfect for a low-carb diet.


Ingredients

  • 3 ripe bananas
  • 1 cup ricotta cheese
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup almond flour
  • 1/4 cup sweetener (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a bowl.
  3. Add ricotta cheese, eggs, and vanilla extract to the mashed bananas and mix well.
  4. Combine the dry ingredients: baking powder, baking soda, salt, cinnamon, and almond flour in another bowl.
  5. Gradually add the dry mixture to the wet mixture, stirring until combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for about 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing and serving.

Notes

Use very ripe bananas for better flavor. Do not overmix the batter after adding dry ingredients.
