Description

Quick and easy no-bake carrot cake bars made with almond flour and real carrots, perfect for lunch boxes, snacks, or light desserts.


Ingredients

  • 1 cup almond flour
  • 1 cup grated carrots
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • Cream cheese or yogurt for topping (optional)

Instructions

  1. In a large mixing bowl, combine almond flour, grated carrots, shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  2. Fold in walnuts if using.
  3. Press the mixture into a lined 8×8 inch baking pan, spreading it evenly.
  4. Refrigerate for at least 120 minutes until set.
  5. Once set, cut into bars and serve with cream cheese or yogurt on top if desired.

Notes

For best results, work with cold ingredients. Press the mixture firmly to avoid crumbling and chill long enough for the oil to firm up.
