- 2 cups cooked corned beef, chopped
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1 cup cooked and shredded potatoes or prepared coleslaw
- 1/2 cup Thousand Island dressing
- Fresh parsley, for garnish
Instructions
- In a large mixing bowl, combine the chopped corned beef, sauerkraut, and shredded potatoes or coleslaw.
- Divide the mixture into serving bowls.
- Top each bowl with Swiss cheese, and drizzle with Thousand Island dressing.
- Garnish with fresh parsley.
- Serve immediately.
Notes
Drain the sauerkraut well for a firmer bowl. Use fresh shredded potatoes or ready coleslaw for speed. Heat corned beef slightly before mixing for a warm bowl.
