Description

Ingredients

  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup cooked and shredded potatoes or prepared coleslaw
  • 1/2 cup Thousand Island dressing
  • Fresh parsley, for garnish

Instructions

  1. In a large mixing bowl, combine the chopped corned beef, sauerkraut, and shredded potatoes or coleslaw.
  2. Divide the mixture into serving bowls.
  3. Top each bowl with Swiss cheese, and drizzle with Thousand Island dressing.
  4. Garnish with fresh parsley.
  5. Serve immediately.

Notes

Drain the sauerkraut well for a firmer bowl. Use fresh shredded potatoes or ready coleslaw for speed. Heat corned beef slightly before mixing for a warm bowl.
