Description

A warm, simple meal perfect for weeknights and family dinners, using ground beef, gravy, mixed vegetables, and mashed potatoes.


Ingredients

Scale
  • 1 lb ground beef
  • 1 cup gravy
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 4 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. In a cast iron skillet, heat a bit of olive oil over medium heat. Add the ground beef and cook until browned.
  2. Stir in the gravy and mixed vegetables, bringing to a simmer. Season with salt and pepper.
  3. Spread the mashed potatoes evenly over the meat mixture.
  4. Sprinkle shredded cheese on top.
  5. Bake in a preheated oven at 400°F (200°C) for about 20-25 minutes or until the cheese is golden and bubbly.
  6. Let cool for a few minutes before serving.

Notes

To store, cover and keep in the fridge for up to 3-4 days, or freeze for up to 2 months. Reheat at 350°F (175°C) until hot.
