- 1 cup almond flour
- 1 cup unsweetened applesauce
- 1/2 cup erythritol (or another sugar substitute)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, mix together the almond flour, erythritol, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk the eggs, applesauce, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Fold in the nuts if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
Serve warm or at room temperature with coffee, tea, or a glass of milk. Add yogurt or fresh berries for extra flavor.
