Description

Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup erythritol (or another sugar substitute)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the almond flour, erythritol, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk the eggs, applesauce, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the nuts if using.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.
