- 1 lb ground beef
- 1 small onion, chopped
- 1 small red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 3/4 cup green olives, sliced
- 1/4 cup raisins
- 2 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sauté until softened.
- Add minced garlic and cook for another minute.
- Increase heat to medium-high and add the ground beef, cook until browned.
- Stir in diced tomatoes, olives, raisins, cumin, oregano, salt, and pepper.
- Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
- Serve hot, optionally over cauliflower rice for a low-carb option.
Notes
Use lean ground beef to reduce grease. Brown the beef well for more flavor. Adjust salt after simmering and add more raisins for a sweeter taste if desired.
