Ingredients

  • 1 small onion, chopped
  • 1 small red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 3/4 cup green olives, sliced
  • 1/4 cup raisins
  • 2 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sauté until softened.
  2. Add minced garlic and cook for another minute.
  3. Increase heat to medium-high and add the ground beef, cook until browned.
  4. Stir in diced tomatoes, olives, raisins, cumin, oregano, salt, and pepper.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally.
  6. Serve hot, optionally over cauliflower rice for a low-carb option.

Notes

Use lean ground beef to reduce grease. Brown the beef well for more flavor. Adjust salt after simmering and add more raisins for a sweeter taste if desired.
