A quick and easy taco beef pie filled with ground beef, beans, and cheese, perfect for the whole family.

- 1 lb ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese (cheddar or Mexican blend)
- 3 large eggs
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Chopped green onions and sour cream for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is soft. Drain excess fat.
- Stir in the taco seasoning, black beans, and corn. Mix well and remove from heat.
- In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
- Spread the beef mixture in a greased pie dish, then pour the egg mixture on top.
- Sprinkle with shredded cheese.
- Bake for 30 to 35 minutes, or until the center is set and the top is golden.
- Allow to cool slightly before slicing.
- Serve with optional toppings like green onions and sour cream.
Notes
Use lean ground beef and drain well to avoid a soggy pie. You can swap heavy cream for milk for a lighter version.
