This taco lasagna mixes familiar taco flavors with the comfort of lasagna for a hearty, family-friendly meal.
Ingredients

- 12 lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups salsa
- 2 cups shredded cheddar cheese
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, cook ground beef over medium heat until browned. Stir in taco seasoning and salsa, and cook for 2-3 minutes more.
- In a 9×13 inch baking dish, spread a layer of the meat mixture, followed by layers of noodles, beans, corn, cheese, and sour cream. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes or until cheese is bubbly and golden.
- Allow to cool for a few minutes before serving. Top with diced tomatoes and green onions if desired.
Notes
Let the lasagna rest 5 minutes before cutting for better shape. Serve with additional sour cream, chopped tomatoes, and green onions. You can also add sliced avocado or a squeeze of lime for fresh flavor.
