An easy and delicious traybake cake filled with warm spices, fruit, and nuts, perfect for holiday sharing.

- 200g unsalted butter
- 200g sugar
- 4 large eggs
- 300g all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 200g mixed dried fruits
- 100g chopped nuts
- 100g marzipan (optional)
- 100g icing sugar, for decoration
Instructions
- Preheat your oven to 180°C (350°F).
- Cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift together the flour, baking powder, cinnamon, and nutmeg, then fold into the mixture.
- Stir in the dried fruits and nuts.
- Pour the batter into a greased traybake pan.
- Bake for 25-30 minutes or until a skewer comes out clean.
- Let cool completely before decorating with marzipan and icing sugar.
Notes
Use room temperature butter and eggs for a smooth batter. Do not overmix once you add the flour.
