Ingredients

  • 6 hard-boiled eggs
  • 1/2 cup pickled beet juice
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh dill (optional)
  • Paprika for garnish

Instructions

  1. Peel the hard-boiled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  2. Add the mayonnaise, Dijon mustard, salt, and pepper to the bowl. Mash the yolks and mix until smooth.
  3. Place the egg whites in a shallow dish and pour the pickled beet juice over them. Allow them to soak for 30 minutes for coloring.
  4. Spoon or pipe the yolk mixture back into the egg whites.
  5. Garnish with chopped dill and a sprinkle of paprika. Serve chilled.

Notes

Serve chilled and pair with fresh veggies or crackers. They can be stored in an airtight container in the refrigerator for up to 3 days.
