Fluffy Pancakes

A simple and delicious recipe for fluffy pancakes, perfect for breakfast any day.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 ¾ cups milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons pure vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth and fully incorporated.
  3. Pour the wet mixture into the dry ingredients. Gently fold together just until combined; a few lumps are fine.
  4. Let the batter rest for 5–10 minutes.
  5. Heat a nonstick skillet or griddle over low to medium heat and lightly grease it.
  6. Pour 1/4 cup of batter onto the hot surface; cook for 2–3 minutes, then flip and cook another 2–3 minutes until golden.
  7. Serve warm with maple syrup, fresh fruit, or your favorite toppings.

Notes

Make sure not to overmix the batter; letting it rest is key for fluffiness. You can customize with your favorite mix-ins.
