Fluffy Pancakes

Light and airy pancakes perfect for breakfast with syrup or toppings.

Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1 large egg (room temperature)
  • 2 tbsp melted butter (cooled)
  • 1 tsp pure vanilla extract

Instructions

  1. Gather all ingredients and set aside.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. In another bowl, mix milk, egg, melted butter (cooled), and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Preheat a griddle over medium heat and grease lightly with butter or oil.
  6. Pour about 1/4 cup batter for each pancake onto the griddle. Cook until bubbles form on top; flip and cook for another 2-3 minutes until golden brown.

Notes

Let the batter rest for a few minutes before cooking to help the pancakes rise. Adjust the heat on your griddle as needed.
