- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/4 cup powdered erythritol (or sweetener of choice)
- 1 teaspoon vanilla extract
- Crushed nuts or sugar-free granola for layering (optional)
Instructions
- In a large mixing bowl, whip heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, erythritol, and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture until combined.
- In a trifle bowl or individual cups, layer the mixture with fresh berries.
- Repeat layers until all ingredients are used, finishing with berries on top.
- Chill for at least an hour before serving.
Notes
Chill your bowl and beaters for firmer whipped cream. Use ripe, firm berries for best results. Optionally, add crushed nuts or granola just before serving.
