Ingredients

  • ½ medium head of green cabbage (45 cups, chopped)
  • 1 pound sausage (kielbasa, smoked, or turkey)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes or smoked paprika

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent (about 5 minutes).
  2. Stir in the minced garlic for one more minute.
  3. Add the sliced sausage to the skillet and cook until browned (7-10 minutes), stirring occasionally.
  4. Incorporate the chopped cabbage into the skillet, mixing well.
  5. Cook for about 5-7 minutes until wilted.
  6. Season with salt, pepper, and optional spices.
  7. Cover briefly to steam until tender yet slightly crunchy (another 10 minutes).
  8. Serve hot.

Notes

For a variation, add sliced bell pepper or carrot for color. Bacon can be used instead of sausage for a smoky flavor. To make it vegetarian, substitute with smoked tofu or tempeh.
