Description
A simple, cold snack made with Greek yogurt and topped with fruit and granola.
Ingredients

- 2 cups full-fat Greek yogurt (plain or vanilla)
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1/2 cup sliced strawberries
- 1/2 cup blueberries
- 1/4 cup granola
- 2–3 tablespoons unsweetened coconut flakes
- 1/4 cup chocolate chips
Instructions
- Line a 9×13-inch baking dish or rimmed sheet tray with parchment paper.
- In a medium bowl, blend the Greek yogurt with the maple syrup and vanilla extract until well combined.
- Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/4 inch thick.
- Sprinkle the sliced strawberries, blueberries, granola, coconut flakes, and chocolate chips evenly over the top.
- Press very gently so it all sticks.
- Place the baking sheet in the freezer for at least 180 minutes, or until the yogurt is firm. For best results, freeze overnight.
- Once frozen, remove the baking sheet from the freezer. Break the yogurt bark into pieces using your hands or cut it with a sharp knife.
Notes
Serve the bark cold straight from the freezer. Let pieces sit 1-2 minutes if too hard. Store in an airtight container in the freezer for up to 1 month.
