Description
Delightful and healthy frozen yogurt granola cups combining oats, almond butter, and Greek yogurt. Perfect for breakfast or a refreshing snack!
Ingredients
Scale
- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3–4 tbsp honey (adjust to desired sweetness)
- 1 tsp vanilla extract
- 1 1/2 cups Greek yogurt
- Berries of choice to top
Instructions
- In a bowl, mix the oats, cinnamon, almond butter, honey, and vanilla extract until combined into a sticky dough. If the mixture feels too dry, add a bit more almond butter and honey until it holds together well.
- Line a muffin pan with muffin liners.
- Spoon a portion of the granola dough into the bottom of each muffin cup and press firmly with your fingers to create a sturdy base layer.
- Spoon a generous amount of Greek yogurt into each granola base cup, then top with fresh berries and any leftover granola dough for added texture.
- Place the muffin pan in the freezer for at least 240 minutes or until the cups are fully set and firm.
- Remove the frozen yogurt granola cups from the freezer, let them thaw slightly for a couple of minutes to soften, and enjoy as a tasty, cool treat.
Notes
Adjust the sweetness by adding more or less honey. Store in an airtight container in the freezer for up to one month.
