Addictively Crispy Garlic Herb Roasted Potato Skins

Crispy and flavorful garlic herb roasted potato skins, perfect as a snack or appetizer, and easily customizable with toppings.

  • 4 large potatoes
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them several times with a fork. Bake the potatoes for about 45-60 minutes, or until tender.
  3. Once the potatoes are cool enough to handle, cut them in half and scoop out some of the flesh, leaving a thin layer inside the skin.
  4. Brush the potato skins with olive oil and sprinkle garlic powder, dried herbs, salt, and pepper.
  5. Place the skins on a baking sheet and bake for an additional 15-20 minutes, or until crispy.
  6. If desired, sprinkle with grated Parmesan cheese and return to the oven for another 5 minutes.
  7. Garnish with fresh parsley before serving. Enjoy!

Notes

Serve hot with sour cream, ranch dressing, or your favorite dipping sauce. You can customize with toppings like bacon bits or shredded cheese.
