Description
These gingerbread truffles are small, sweet, and full of warm spice. They are quick to make and great for holidays or as a small treat.
Ingredients

- 1 cup gingerbread cookies, crushed
- 1/2 cup cream cheese, softened
- 8 ounces white chocolate, chopped
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- Sprinkles or crushed cookies for coating
Instructions
- In a bowl, mix the crushed gingerbread cookies, softened cream cheese, cinnamon, nutmeg, and ginger until well combined.
- Form the mixture into small balls and place them on a baking sheet.
- Freeze for about 30 minutes.
- Melt the white chocolate in a microwave or double boiler.
- Dip each truffle in the melted chocolate and place them back on the baking sheet.
- While the chocolate is still wet, sprinkle with sprinkles or crushed cookies.
- Let the truffles set at room temperature or refrigerate until the chocolate is firm.
Notes
Soften the cream cheese to make mixing easy. Chill the truffles well before dipping to help them keep their shape. Melt chocolate slowly and stir well to avoid burning.
