Gourmet Brownie Cookies

Combining the rich, fudgy flavor of brownies with the chewy texture of cookies, these Gourmet Brownie Cookies are perfect for any occasion.

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, cocoa powder, baking powder, and salt in another bowl. Gradually add to the creamed mixture, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Drop tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are firm.
  8. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For an extra flavor boost, you can sprinkle a bit of sea salt on top before baking. Store in an airtight container at room temperature for up to a week.
