Ingredients

- 1 sheet puff pastry
- 1 cup mushrooms, finely chopped
- 1 leek, cleaned and chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the leeks until soft.
- Add the chopped mushrooms and cook until they are golden brown. Season with salt and pepper.
- Roll out the puff pastry and cut into squares.
- Place a small spoonful of the mushroom and leek mixture in the center of each square.
- Fold the pastry over to create pockets and seal the edges.
- Brush the tops with the beaten egg.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Serve warm.
Notes
These puff pastry bites are best served warm. Add a light dipping sauce for extra flavor.
